Mountaineer Blend: Tasting Notes & How to Brew It

Meet the Mountaineer Blend

Some coffees are made for slow mornings on the porch. The Mountaineer Blend is made for the kind of morning where you lace up your boots, shoulder a pack, and head for the ridge. It's bold enough to fuel the climb, smooth enough to savor at the summit.

We built this blend from two of our favorite origins: Brazil and Papua New Guinea. Each brings something essential to the cup.

What's in the Blend?

Brazil is the backbone. Natural-processed Brazilian beans are famous for their low acidity, full body, and nutty-chocolatey sweetness — think the satisfying warmth of a freshly baked brownie. They create the round, approachable base that makes this blend easy to drink every single morning.

Papua New Guinea adds complexity. PNG coffees bring a distinctive syrupy texture and earthy depth that keeps the cup interesting. Together, the two origins create a balance of familiar comfort and subtle intrigue.

Tasting Notes

  • Cocoa powder — rich and dry, the way good dark chocolate finishes
  • Syrupy body — a coating, almost velvety mouthfeel
  • Balanced cup — low acidity, no harsh edges, built for daily drinking

How to Brew the Mountaineer Blend

Pour-Over (Recommended)

Pour-over brings out the cocoa notes beautifully and lets the syrupy body shine.

  1. Grind: Medium — think coarse sea salt. Use 1:15 coffee-to-water ratio (e.g., 25g coffee to 375g water).
  2. Water temp: 200–205°F (just off boil). Lower temps mute the chocolate; higher temps can add bitterness.
  3. Bloom: Start with twice the weight of water (50g) over your grounds. Let bloom for 30–45 seconds to release CO₂.
  4. Pour: Add the remaining water in slow, concentric circles over 2–3 minutes. Aim for a total brew time of 3:00–3:30.
  5. Enjoy: No cream needed — but a splash of whole milk complements the cocoa notes perfectly.

Espresso

The Mountaineer Blend pulls a beautifully balanced shot — low acidity means it won't taste sour even if your technique isn't perfect.

  1. Dose: 18g in, 36g out (1:2 ratio)
  2. Time: 27–30 seconds
  3. Grind: Fine — adjust finer if your shot runs too fast or tastes thin
  4. Notes: Expect a rich, chocolatey crema. Works beautifully as the base for a latte or flat white.

French Press

If you love a full-bodied, immersive brew, French press is an excellent choice for the Mountaineer.

  1. Grind: Coarse — like coarse breadcrumbs
  2. Ratio: 1:12 (e.g., 30g coffee to 360g water)
  3. Steep: 4 minutes, then press slowly
  4. Tip: Let it sit for 30 seconds after pressing before pouring — the sediment settles and the cup gets cleaner
